Raw sugar is brown in color due to the presence of molasses and other natural compounds that were not removed during the processing. It has a somewhat coarser texture compared to white sugar, and its flavor is often slightly richer and more complex.
Raw sugar is a type of sugar that has undergone minimal processing and retains some of the natural elements found in sugar cane. It is produced from sugar cane juice through a simple refining process, as opposed to the more extensive refining process used to produce white sugar or granulated sugar.
The production of raw sugar typically involves the following steps:
- Harvesting and Extraction: Sugar cane is harvested, and the juice is extracted by crushing the cane stalks.
- Clarification: The extracted juice is clarified to remove impurities and solids. This step involves heating the juice, adding lime (calcium hydroxide) to neutralize acids, and then removing the precipitated impurities
- Evaporation: The clarified juice is then concentrated by evaporation to increase the sugar content.
- Crystallization: The concentrated juice is further heated, and sugar crystals start to form as the water content reduces. These sugar crystals are then separated from the remaining liquid, known as “molasses.”
- Centrifugation: The sugar crystals are spun in centrifuges to separate them from the remaining syrup.
- Drying: The separated sugar crystals, which still contain some molasses and natural impurities, are dried to produce raw sugar.
Raw sugar can be further processed to produce refined white sugar, which involves additional steps to remove most of the remaining molasses and impurities. The result is a purer, white-colored sugar that is more commonly used for household and industrial purposes.
Some people prefer raw sugar over refined white sugar because it is less processed and retains more of the natural characteristics of sugar cane. It is also sometimes used in specialty or artisanal food products and beverages where the unique flavor and color of raw sugar are desired.
